Ingredients:
Note: Measurements are approximate adjust as you like
2 cups frozen mixed vegetables
4 cups mashed potatoes
2 tbsp margarine (or butter)
2 tbsp ranch dressing (or Miracle Whip)
500 grams extra lean ground beef
1 pkg Shepherd’s Pie seasoning
To taste Salt & Pepper
Instructions:
Set frozen mixed vegetables to boil in water in a saucepan until soft, drain, set
aside.
Make mashed potatoes (peel and chop about 4 to 5 large potatoes, boil until soft,
drain, then mash), then add margarine, dressing, salt and pepper to taste, set
aside.
Fry ground beef until crumbly and well-browned. Add cooked vegetables and stir.
Add Shephard’s Pie seasoning (follow directions on package).
Preheat oven to 350 degrees.
Place the meat and vegetable mixture in the bottom of an appropriately-sized
oven-safe casserole dish and press down with the back of a large spoon.
Drop mashed potatoes on top of the meat mixture by the spoonful and press
down gently until it evenly covers the meat.
Place dish in preheated oven and bake uncovered for 25 to 30 minutes to heat
through.
Note: This is a simple throw together recipe I worked out by myself. The
measurements here are approximate. I often roughly double this to make it go
further. If you want to add things like onions, mushrooms, or other flavourings,
go for it!
